    Preheat oven to 190°C. Toss baby potatoes with olive oil, garlic, thyme, salt, and pepper. Roast potatoes for 20–25 minutes until golden and crispy.

    Season the salmon with salt and black pepper.

    Brush salmon lightly with custard mixture and optional Dijon mustard.

    Drizzle lightly with olive oil.

    Bake the salmon at 190°C for 12–15 minutes until cooked through and golden. Plate the roasted potatoes beside the salmon and garnish with fresh herbs and lemon.
