A lighter version of the classic Italian Alfredo made with grilled chicken, creamy parmesan sauce, and fettuccine pasta. This balanced recipe keeps the comforting flavor of traditional Alfredo while using lighter ingredients for a healthier meal.

    Bring salted water to a boil and cook fettuccine according to package instructions. Season chicken with salt and pepper and grill or pan-sear with olive oil until cooked.

    Slice the cooked chicken into strips.

    In a pan heat olive oil or butter and sauté garlic until fragrant.

    Add milk or light cream and simmer gently.

    Stir in Greek yogurt and parmesan cheese to create a creamy sauce.

    Gluten-Free Pasta Option

    For a gluten-free version, replace traditional fettuccine with brown rice pasta, chickpea pasta, or lentil pasta. Homemade gluten-free pasta can also be made by mixing gluten-free flour blend, egg, olive oil, and water, then rolling and cutting into fettuccine strips before cooking.
