Preheat oven to 180°C. Heat olive oil in a pan and lightly sauté potato slices, onion, and bell peppers for 3–4 minutes.

In a bowl whisk eggs, milk, herbs, salt, and black pepper.
Add sautéed vegetables and grated cheese to the egg mixture. Pour mixture into a lightly greased baking dish or oven-safe skillet. Bake for 18–20 minutes until set and lightly golden. Allow to rest for 3–4 minutes before slicing and serving.
