A modern interpretation of Mexican-inspired mole where tender chicken is cooked in a warm, aromatic sauce made with turmeric, roasted walnuts, and colorful bell peppers. The roasted walnuts create a naturally creamy texture while turmeric adds depth and earthy warmth. Served with fluffy white rice, this dish offers a balanced and comforting meal.

    Rinse the rice and cook with water and salt until fluffy. Set aside warm.

    Stir in turmeric powder, paprika, cumin, and chili powder.

    Add roasted crushed walnuts and mix well to coat the chicken. Pour in chicken stock and simmer for 10–12 minutes until the sauce thickens. Add bell pepper cubes and cook for another 3–4 minutes. Finish with yogurt or cream if desired for a smoother sauce.
