Prepare the Potatoes: Roast baby potatoes with olive oil, thyme, salt and pepper at 200°C for about 20 minutes until golden. Cook the Vegetables: Lightly steam broccoli and French beans until tender while keeping their vibrant color. Prepare the Lobster: Split the lobster lengthwise and brush with olive oil, garlic, lemon juice, salt and pepper. Bake the Lobster: Roast or grill the lobster for 8–10 minutes until the meat becomes opaque and tender.

Serve: Arrange lobster with potatoes, broccoli and French beans and spoon garlic lemon butter over the lobster.
